DiscoverOur Story

Marqette is a simple food market inspired space. The use of reclaimed materials have been chosen to give the food court an established feel in what is quite a modern transport hub. With features including a 1960s Citroen split screen van, steel shipping containers, reclaimed timber from American Amish barns and Dolphin’s Barn Brick salvaged from the demolition of U2’s Windmill Lane studio. Marqette employs over 110 staff and they will provide a range of food and beverages for passengers to enjoy.

The €4m investment evokes traditional outdoor food markets in an urban setting, and caters for 5,000 passengers and Airport staff daily, offering locally sourced, organic produce as well as fresh artisan breads that are baked on site. The different servery counter styles and eclectic furniture mix were designed to avoid the space having a conventional clean lined overly modern feel. The designer team have succeeded in creating a cosy and inviting space where the passenger can take time out between check in and boarding in comfort. A ceiling raft sits over the main servery areas, with bespoke terracotta pendants protruding through it over the centre island units. Other eye catching features include salvaged fruit crates, milk churns and beer casks.

Accompanying the unique and dramatic interior is a carefully chosen menu designed by its executive chef team led by Peter Brennan. The bar area offers comfortable and stylish surroundings in which to catch the latest news or sports scores whether enjoying a craft beer or barista coffee.

Ireland’s reputation as a food island is richly deserved and it is only fitting that this is reflected in the airport. Providing freshly cooked food using the best of what Ireland has to offer is our mission and passion. I believe in cooking great food, simply.
Peter Brennan, Executive Head Chef, Marqette

Marqette sets a new standard for food service at Dublin Airport, offering customers and staff food to go, food on the slow and food on the fly which would allow people to take their food on board. We are sourcing the best quality produce from passionate local suppliers of North County Dublin and our menus reflect seasonal availability. We are delighted to be located within The Loop and we look forward to wowing passengers and staff with our naturally based food offering.

  • I had a very lovely Scottish man help me out this morning at the crack of dawn. I was struggling with my handbag, cabin bag and lack of coffee! He took my tray, walked around with me, got my breakfast/coffee and walked me to a table. Lovely staff and good bit of Irish fry up. To the man who helped me out this morning - enjoy your holiday to Australia later this year

  • Had a lovely experience in Marqette last week. I was traveling with my daughter and the staff could not have been more helpful, someone watched her for me while I went to get my food, and a lovely gentleman even carried my tray to the table for me. Food was beautiful. I would highly recommend it.

  • Some of the best food in Dublin is at the airport, who knew!! Beautifully prepared and served With so much love, you can tell! Fresh juice was so good, and all ridiculously reasonably priced. Would have paid so much more for this experience!! Almost forgot I had to catch a flight I was so taken away from my airport groove!
